👨‍🍳 How to Make Kung Pao Chicken – Step-by-Step

🔹 Step 1: Marinate the Chicken

  1. In a bowl, combine diced chicken with soy sauce, cornstarch, and sesame oil.
  2. Set aside for 10–15 minutes while you prep the sauce and veggies.

🔹 Step 2: Mix the Kung Pao Sauce

In a small bowl, mix:

  1. Soy sauces
  2. Vinegar
  3. Hoisin (if using)
  4. Sugar
  5. Cornstarch
  6. Water

Stir well until smooth. This sauce thickens beautifully when cooked and coats the chicken perfectly.

🔹 Step 3: Stir-Fry the Chicken

  1. Heat oil in a wok or pan over medium-high heat.
  2. Add the marinated chicken and stir-fry for 3–4 minutes until golden and nearly cooked.
  3. Remove and set aside.

🔹 Step 4: Temper the Aromatics

  1. In the same wok, add a bit more oil if needed.
  2. Toss in dried red chilies and Sichuan peppercorns. Sauté for 15–20 seconds until fragrant (do not burn).
  3. Add garlic, ginger, and spring onion whites. Sauté for another 30 seconds.

🔹 Step 5: Add Veggies & Chicken

  1. Add diced bell peppers and stir-fry for 1 minute (keep them slightly crunchy).
  2. Return the chicken to the wok.
  3. Pour in the sauce and stir continuously until it thickens and glazes the chicken evenly — about 2 minutes.

🔹 Step 6: Add Peanuts & Finish

  1. Toss in roasted peanuts and spring onion greens.
  2. Stir well to combine.
  3. Turn off the heat and serve hot!
